Navy strength gin was historically bottled high enough that gunpowder would still light if the barrel spilled. Ours is distilled to 58.8% for a simpler reason: at that strength the spice botanicals sing.
Built on the same Clare Valley grape base as our Signature, the Navy Strength takes a different turn in the botanical basket. Cardamom, cassia and star anise come to the front, ginger adds bite, and a thread of lavender keeps it from turning heavy. It is the gin our bartenders reach for, because it holds its shape in a cocktail instead of disappearing behind citrus and sugar.

Cassia and cardamom carry the higher proof beautifully, while lavender and lemon myrtle stop the spice from becoming one-note.

Neat over a large ice cube with fresh lemon and a frond of dill.
Try it in: Chuckles — 60ml Navy Strength Gin, fresh lime, 15ml lemon myrtle syrup, mint and ginger beer over ice in a tall glass.
Pairs with: Salt and pepper squid, oysters, or anything off the fish and chips menu.
